Well i tried this spicy veg pulav for this evening's dinner and it turned out to be a big hit !!!!!So let me share it with u guys.....
Ingredients:
Basmati rice-2 cups
onion-1 chopped lengthwise
Carrot -1 chopped
Beans-10 nos chopped
Corn nibulets-1 small cup
Frozen peas-1 small cup
Ghee-2 tbsp
Oil-3 tbsp
a piece of cinnamon
bay leaf
cloves-2
cardamom-2
garam masala-1 tbsp
chilli powder-1 tbsp
salt as per taste
Ground to a masalapaste :
Onion-1
Green chilli-1
Dry Red chillies-4
Garlic-3 pods
Ginger-1 inch piece
Coriander - a small bunch
Method:
Soak basmati rice for 20mts.
Add oil and ghee in a kadai and after it becums hot,put in cardamom,cloves,bay leaf and cinnamon.Once this is fried a bit add the onions.Once the onion changes color,add in the veggies.Let the vegetebles get cooked a bit and add in the ground masala paste.after 5 mts add in the garamamasala powder,chilli powder and salt.once the paste mixes well with the vege,add in the basmati rice.let it get mixed for 2 mts.transfer the mixture to a rice cooker.add water and cook.Once its done,garnish it with corainder.This just tastes great with onion raita..

puli aval
this is one of the quick tiffins and easy too...
ingredients:
rice flakes or aval(thick)-1 cup
jaggery-a small piece
turmeric-a pinch
hing for taste
peanuts roasted-2 tbsp
tamarind paste-1 cup
mustard-1/2 tbsp
curry leaves -a handful
dry coconut powder - 2 tbsp (optional)
oil-2 tbsp
salt
masala powder:
cinnamon-1"stick
cloves -2
dhaniya or coriander seeds -2 tbsp
jeera or cumin-1/2 tbsp
chana dhal or kadalaiparuppu-1 tbsp
red chillies-6 nos
Fry the above ingredients in a kadai and powder them in a mixie.
Method.
Roast the aval for 2 mts in a dry kadai and grind into to rava consistency coarsely in a mixie.
Soak the coarse aval in tamarind paste.Add turmeric and jaggery to this mixture.
Allow it to stand for 30 mts.After half an hour the aval wud have absorbed the water and becum fluffy. Now add the masala powder to the aval.
Now heat oil in a kadai and add mustard,curry leaves,hing and let it splutter.
Now add the poha and add the coconut powder.
Yummy puli aval is ready to eat now.This can be served with a cup of raita or plain yoghurt !!!
